There are a number of reasons for this. Firstly, such abrasive cleaning will dull the paintwork removing the luster of the paint. This will leave the color very flat and not as it was intended. The Staub Cocotte is jaw-droppingly good at everything it does. I made sourdough bread as the first test to see if the lid knob would actually bear the 500-degree heat repeatedly. It did! And the bread was perfect with blistery crust and an amazing crumb.

The Cocotte can be used on any kind of hob and inside the oven. Try searing a pork tenderloin on the hoband then putting it in the oven to roast. With a crust of olive oil, garlic, sage and rosemary, this meal will tastelike a holiday to the South of France. The reality is that they function and work in exactly the same way, albeit the enameled versions are easier to care and maintain. What is a cocotte used for? The classic casserole dish

There are plenty of old Le Creuset customers that moved over to Staub. Some of them will argue that the Staub is the better overall product. Staub like to call their shallow cocottes braisers or bouillabaisses. They’re not wrong, but I think of them as casserole dishes.

Staub lids are quite possibly the highest quality you can find. Firstly, in my experience, they always use metal knobs which are less likely to break. The bouillabaisse is an excellent pan for cooking fish dishes, but nothing is stopping you from using it for other things. If you need a casserole or braiser, it’s worth considering. Capacity Quarts (Litres) If you have no idea what to get, I recommend the 26 cm, round, standard height 5.5 quart cocotte. This will easily serve a family of four, and is both a workhorse and an elegant serving dish. Even if you are tempted by others, this makes a good first Staub cocotte.The others are more likely to be used in the oven to create individual dishes (i.e. one mini Cocotte per guest.) Just to confuse things even more, sometimes Staub sizes use imperial quarts, instead of US quarts. I have used US quarts in my comparison tables, since hardly anyone actually uses imperial quarts anymore.
